Is it possible to have a head-mate who is not human; perhaps an animal?
Yes. There are many groups, who have individuals living with them who are non-humans. It's possible some may be an earth animal spirit, or from a race who are not humanoid at all and are from entirely different worlds.
What is the definition of non-human or Otherkin?
The most basic definition seems to be 'anyone who is not a human'. This can include also Vampires, dragons, Elves, and more.
How does one identify as being Otherkin? What does it feel like?
For many, non-humans are born that way. It could be asked, "how does one identify as a human and what does being human feel like?"
Is having a demonic head-mate similar to demonic possession?
An individual who claims to be a demon may live within a group in a way similar to the other head-mates. This doesn't mean the demon is automatically 'evil'. Demon could be the name of their species. Possession gives the impression of someone attempting to cause another harm. Though, there are probably some who feel it doesn't make any difference.
When people say they have angels and demons in them, do they, actually believe that it's REAL angels and demons who have for some reason decided to move into their body? Or that it's just headmates who believe that's what they are?
Not sure what you consider 'real' in this context. In a religious sense? Many people do believe religious angels and demons are real. In some groups, if the angels or demons are able to speak and think and others can see them, then they are considered real. Some may be real in a 'religious sense' and some may only refer to themselves as such, while being an entirely different species.

There are most assuredly Vampires and Elves within some groups. Perhaps you just haven't come across them yet.

It depends on what reality you are talking about. For you, your reality may only consist of this single planet earth and what it can offer you. For others, their reality may include other worlds where many other species live. These species of individuals may not exist on earth, but they do exist in other places. It also means you don't have to believe any of it if you choose not to. But remember that telling someone that they don't exist can be quite invalidating, no matter what species they are.
